New Post

So much has happened I need to get it out of my head. I would have posted sooner but I have packed my camera battery charger away and cannot find it along with a lot of other things that I need. So I cannot take pictures, or have anything to inspire my posts.
We did finally move and are enjoying more room. The kids are delighted that they do not need to stack their bunk beds but can have their own bed to themselves. We are also enjoying the pool and being able to go swimming whenever we want. It also happens to be a good motivator to get things done like chores and homework. The bills haven't caught up with us yet so for now it is bliss, I might sing another tune in a month.
School has started off with a bang and it has been good. Andrew is in Mrs. Samorono's 5th grade class. He is excited to use the smart board that is in their classroom. Lilly is in Mrs. Henson's 3rd grade class and likes it so far. She keep saying though that the best part of her day was seeing Mrs. Hollywood, her old teacher. Abigail is now in 1st grade and stays at school all day. She is really adjusting well to the longer day and Mrs. Martin is very good for her. Her only problem is to figure out the bathroom breaks and give herself enough time to get there. The kindergarten room had it's own bathroom and now she has to use the big ones in the hall by herself but I am sure she will get the hang of it. Foster started preschool and we both loved his teacher but I got a call today that he is actually going to the wrong site and should be going to Cieniga HS for his preschool so he will change classes tomorrow. Foster took the bus today for the first time like a big boy without even looking back. I am glad that it was an actual mini bus because if a white van had shown up Foster would have been upset and we would have had problems.
As for me I am still very pregnant. I am getting itchy feet about wanting to have this baby. Even though I still have too much to do I want an excuse to stop it all and just sit. I know the grass is always greener on the other side of the fence but I am ready to be just me again. This will probably be a long two weeks waiting. I should have brainwashed myself that I was due August 15th so that this wouldn't happen, but here I am being anxious about every little cramp. My sisters threw me a surprise baby shower which was a wonderful distraction where I got my toes painted, ate good food, got to relax and chat with family and friends. I need something like that everyday to keep my mind off of "when am I going to have this baby already?". Oh well, do I have a choice anyway, they come when they come.
Hopefully if my day does get productive I will find the magic box that is holding all of the things that I am missing (crib sheets, baby blankets, my back scrubber for the shower, camera charger cords, dog nail clippers, etc...) and I will have more to say tomorrow.

Painting, Packing and Planning


I feel like I am in a whirlwind of activity. Ryan and I have an unsaid motto "If it is going to be hard or unpleasant, let's at least make it short as possible." So we are painting again (after we thought we had done enough painting to last us ten years!). I am trying desperately to pack and repack what needs to be packed before we rent a truck on Friday in between Andrew's swim team practices and the other kids swim lessons. I haven't even thought about getting ready for school until spending an hour yesterday at Mesquite registering the kids. I'm not sure when that will happen. On top of that being the parents that we are we promised to take the kids to Breakers for finishing their library reading program. That needs to get squeezed in somewhere ( I think on Friday). Which mean there is a lot of stuff that needs to be planned so we don't get our ox before our cart. Hopefully today I will have a full day of staying home and getting something done and that will help me settle everything, or maybe it will draw my attention to how much more I have to do, I'm not sure. Either way life is exciting and I wouldn't have it any other way.

We're Moving!




So the house saga continues or has been continuing but I just haven't had time to say anything about it. We received an offer on our house over July 4th and yesterday just had our inspection. Hopefully all went well. We are planning on staying until the 10 day inspection period is over and make sure that there loan papers were approved, then Saturday we move! We are renting the house we plan to buy until the court can approve our offer. Here are some of the pictures of the house on Day Springs.

Doughnuts, doughnuts and more doughnuts!


So Tuesday I had this crazy idea all day that I wanted to make doughnuts. I guess I can blame it on the pregnancy. Anyway, my original plan was to do it during the early afternoon while I still had energy to do anything and forget about all the stuff I should be doing. For some reason that didn't happen, I can't remember why now. But after a long day Ryan called and said he was coming home and I told him of my lofty plans. He jumped right on board even though it was 5pm at night, we both decided to have doughnuts for dinner. My job was to make the dough and then Ryan agreed to take over from there and cook them. I have never made the delicious doughnuts that my mom makes every year for Halloween but thought that I could handle it so I got the recipe and decided that I would quadruple it. (The recipe didn't mention how many it made and I was hungry!) Three hours later Ryan is still cooking doughnuts, bringing them to me on a plate and I was glazing them. Honestly it felt like a punishment. I think we both were done by about 9:30, I was done with it by 8 (and was being a little whiny). Suffice it to say we will not be doing that again and there is a new rule in our house that when making a new recipe I will not multiply it!

It was an afterthought to take pictures so these were taken when we were about half way done.

I also have to say that they were too good...they tasted just like crispy creme doughnuts.

Here is the recipe for anyone interested (by the way the recipe makes about 18 doughnuts plus the doughnut holes)

Joyce’s Spudnuts

3 c. unbleached flour
1 T. yeast
1 t. baking powder
1 c water or milk
1/4 c. butter
¼ c. sugar
1 t. salt
egg
½ c. mashed potatoes (reconstituted)

Combine flour, sugar, yeast, baking powder, butter and mashed potatoes in a mixing bowl. Add water or milk (120 degrees) and egg. Add enough of the flour and knead to make a soft but not sticky dough. Place in a greased bowl and cover with plastic wrap and allow to rise until doubled in bulk. Roll out on floured board about 1/2 inch thick and cut with doughnut cutter and place on lightly floured paper towels or tea towel. At this point begin to heat oil until it reaches 350 degrees. Do not let it get hotter. Let rise again until light. Carefully lift doughnuts and place into oil. Fry only until light golden brown. Drain on paper towels. Dip in following powdered sugar glaze that has been made up ahead of time and drain on a wire rack.

4 c. sifted powdered sugar
1/3 c. boiling water
I T. corn syrup
1/2 t. vanilla extract
